I have a large mason jar full of feathers in the living room and a smaller one in another room. Keep thinking I will make time to be creative with them all.

I agree with the earning her trust back routine. Limit interactions to speaking to her, reading a colorful book to her & showing her the pictures, singing or dancing to music and treat giving. Until she relaxes I would not even request a step up, let her come to you.
Poor guy you just never know what is next. Maybe he inhaled some food or water along with the pellet allergy. fingers crossed that the pellets were the cause. You can still put in a call to the Vet and perhaps get advice.
You can always wrap the exposed outer sides of the cage with sunscreen fabric that you use for plants we do that at the Sanctuary to provide some Sunshade and as an extra barricade against predators. I also suggest using something to block entry or escape from below.
I love to watch them take flight! There is hope for Gil girl as Pookie had never flown before living with us and she was 21 yrs old when she arrived. Now she is flighted and has pin point landings but does not take to the air very often.

A busy bird is a happy bird just keeps us on our toes. Have you though about getting a toy laptop for the bird that wants everything, you might be able to find one at a resale shop?
