Interested in following his progress with those feathers. It is a shock just how much feather dust our little Grey friends can produce I am certain your big blue & gold boy will breathe more freely now.
Moulting is not the easiest time for them-itchy and tender pin feathers can be helped with frequent showers or spray mistings. A little extra protein and good fatty acids (walnuts, red palm oil) in the diet helps as well.
I have a friend who believes they are from another planet and have found a way into our lives to study us more closely. She has observed her Goffin using the toaster for communication with the mother ship. LOL She has also mentioned that he escapes from his cage from time to time and then toys she has not ordered with a receipt from her pay pal account-hmmm
Good to hear you are planning ahead and doing your research-Welcome. You will find many helpful posts as you browse through the blog and members are always ready to give you some insight.
Good question-You don't want to feed much cheese as it can get stuck in the crop and block the passage of foods. It depends on our bird what he or she responds to, some birds work for a great verbal reward, some for a food or drink treat and for others a little scritch on the head. Each bird is an individual with preferences all their own, you just have to know your bird well or experiment to see what his or her trigger is.

Yes he looks plucked, he may be dry skinned or sore if new feathers are coming in but I would run to the Vet, have him checked out and get some needed help.
Try wrapping a small treat like a Pine nut in a Spinach leaf and place into a small empty cardboard box with a crumpled coffee filter as he watches, then place into cage. Pookie and Joe both love a game of tug of war with some cotton rope or my shirt or hair or the cage cover.
Having worked with a greyhound rescue and having one of our own years ago I know what big loving couch potatoes those guys are, Sorry for the loss of Kirby and I know Chickie will help you heal.
It sounds like he is a bit uncomfortable or nervous when you approach, that is a natural reaction how long have you had this bird?. I find thatToo's are a bit more outgoing and from my experience quicker to trust than a Grey. Conures are naturally self confidant they think they can kick a Rottweilers butt, no fear of taking their human to task. With Greys going slowly and letting them set the pace works out best for you and them.
